Soave Roncà Monte Calvarina

GRAPE VARIETIES: Garganega.

VINEYARDS: 9 hectares cultivated using the guyot method on the volcanic hills of Mount Calvarina in the municipality of Roncà. Altitude ranges from 250 to 400 metres. 4500 vines/hectare.

VINEYARD AGE: 20 years.

HARVEST: hand-picked in 10 kg crates.

PERIOD: 90% of the product is harvested at the end of September, the remaining 10% at the end of October.

FERMENTATION and AGEING: in steel vats.

APPEARANCE: straw-coloured yellow.

ON THE NOSE: complex arontas of white flowers, gooseberry, lemon and grapefruit, thyme and rosemary.

TASTING NOTES: elegant, refined and spicy with a nice acidity.

AGEING: virtuously evolves in the bottle for at least 10 years. It has a deep colour with intense green notes, as well as complex, mineral aromas, great velvetness and elegance. Great drinkability remains intact. The screw cap version is preferred.

PAIRINGS: "when young" shellfish and cudite, fried fish and cured meats, after ageing for 5/6 years, it pairs well with complex dishes such as Baccalà alla Vicentina.
