Trevenezie Sauvignon

GRAPE VARIETIES: Sauvignon.

VINEYARDS: 2 hectares cultivated in Guyot in the municipality of Trivignano Udinese (Udine), locality Clauiano. Complex alluvial soil, originating from the Tor River, composed of small pebbles, silt and clay. 4500 vines/hectare.

VINEYARD AGE: 10 years.

HARVEST: hand-picked in 10 kg crates.

PERIOD: first week of September.

FERMENTATION: in steel vats.

AGEING: on its own yeasts until the spring after the harvest.

APPEARANCE: straw colour with green hues.

ON THE NOSE: variety emerges overpoweringly with hints of acacia flowers and boxwood. Exotic notes of lychee and passion fruit. Intense sage and tomato leaf.

TASTING NOTES: at the beginnig it expresses all the complexity typical of Sauvignon in particular its vegetal component. Long, persistent savory in the mouth.

PAIRINGS: accompanies well with vegetable dishes, pinzimonio and zucchini flowers. Great pairing with prosciutto and melon, excellent with asparagus, eggs or risotto.
